Yes, that is a photo of half a pie. I always forget to take a photo before we dig in so it's always half gone food items on my blog. Anyhow, here's the recipe:
1 c. strawberries - clean the berries and then measure out a full cup of berries. It helps to cut them in half so you can pack the measuring cup full.
1/2 teas. salt
1/2 c. cold water
1 c. sugar
3 tbls. cornstarch
Graham Cracker crust
Crush the 1 c. of berries. Mix with the salt and water in a saucepan. Mix together the sugar and the cornstarch and add to the crushed berries. Cook and stir over medium heat until thick (it will almost come to a boil and will look shiny). Remove from the heat and cool for 1 hour. Wash and prepare additional berries. Keep these berries whole (smaller berries work well for this). Fill the graham cracker crust with these cleaned, whole berries. When cool, spoon the sauce over the top and refrigerate until well chilled. Serve with whipped topping.
Sooo good and summery! Enjoy!
